2 cups Orange juice
1 cup white wine
1 shallot chopped
2 bay leaves
6 whole black peppercorns
1/2 # unsalted butter cut into small pieces
Place all ingredients in large saucepan and bring to a boil and simmer until almost all the liquid is evaporated and is syrup. Whisk in butter pieces over medium heat until all butter is used. Butter will emulsify and create a nice sauce. This sauce is called a Orange Buerre Blanc. Serve over sweet potato tamales.
