Description:
This my version of the recipe from the Lee Brothers Cookbook. It is a wonderful sandwich, especially with the mango tartar sauce. This recipe makes a lot of mix. It halves and even quarters successfully.

Ingredients:

5# shrimp
2 c fresh corn
2 cloves garlic chopped
1/2 c chopped flat leaf parsley
1/4 fresh grated ginger
1/2 tsp fresh ground allspice
1 c mayonnaise
4 c panko bread crumbs
5 eggs
1 c scallions finely chopped 
1 tbsp Tabasco sauce
2 tsp salt
2 tsp fresh ground black pepper
Directions:
  1. In large mixing bowl cut corn from cob and scrape the milk from cob. Ad the rest of ingredients and mix thoroughly and set aside. In food processor add shrimp in small batches and pulse just to chop shrimp. Do not grind to a pulp! Lightly chop! Add shrimp to corn mixture and mix just until incorporated.

  2. NOTE: Heat olive oil in a non stick skillet and add about a 1/4 c of shrimp mixture, pressing down on mixture to form a patty and saute over medium heat until golden then flip and cook on the other side until golden and cooked through. Serve on little toasted buns with the mango tartar sauce.
