Description:
This a great corn pudding recipe especially if you like you corn pudding more of a custard than a stuffing. Iíve had corn pudding with so much flour or cornmeal that it is to stiff and stuffing like. This is very light and wonderful.

Ingredients:

12 eggs
12 c fresh corn
1/3 c minced onion
3/4 c flour
1 tbsp salt
1/2 c sugar
1 tsp cayenne pepper
1 tsp allspice
1 c butter melted 
6 c half n half 
Roasted red peppers (optional)
Directions:
  1. In bowl of mixer mix eggs, corn, minced onions flour, salt, sugar, cayenne pepper, pumpkin spice and mix thoroughly. Mix in melted butter and half n half and mix well. Pour into greased 2 inch hotel pan, cover with parchment and then foil and bake until custard is set. Remove foil and parchment and bake 15 minutes longer until golden. Serve at once.

  2. NOTE: recipe may be halved
